Before you distribute a PDF, you may want to examine the document for sensitive content or private information that can trace the document to you. Use the Redact tools to remove or redact sensitive images and text that are visible in a PDF.
Redaction is the process of permanently removing visible text and graphics from a document. You use the Redact tools to remove content. In place of the removed items, you can have redaction marks that appear as colored boxes, or you can leave the area blank. You can specify custom text or redaction codes to appear over the redaction marks.

Bookmarks are links with representational text that open specific pages in the PDF. To view bookmarks, choose View > Show/Hide > Navigation Panes > Bookmarks.
By default, thin red outlines appear aroundimages and text you mark for redaction, and black boxes appear inplace of redacted images and text. To remove groups of sensitive content at once, start with the Redaction tool again. In Acrobat, it can be found under Tools, or you can choose it from the Edit menu. Use the Search or Find feature to type in the text you wish to remove and filter accordingly. For example, you can:

In the sample file, choose Mark for Redaction > Text & Images. Then highlight the text in the Name, Address, Telephone, E-mail, Social Security Number, and Date of Birth fields.

The removed information might include metadata, embedded content, attached files, scripts, hidden layers, embedded search indexes, stored form data, comments and annotations, hidden data from previous document saves, obscured text and images, unreferenced data, links, actions, JavaScript, and overlapping objects.

I have access to a scanner at my library which can create "searchable PDFs." These are PDFs that show the exact image of a scanned document, but there is a kind of hidden text in the PDF that can be selected when you try to select a portion of the image that contains text. In this way you can copy and paste text or search for text in the scanned document. This is VERY useful. It's an awesome improvement over raw scanned images. I also have several apps on my mac that can create this kind of searchable PDF from a scanned document or a raw image.
It's worth saying here that I tried the latest version of Adobe Acrobat DC for Mac, and it doesn't seem to even allow me to view the hidden searchable text, much less edit it. It does allow me to replace scanned image with the results of it's own OCR process so that I could edit and save the document. But this would produce horrible results for any of the scanned documents that I am using. It seems designed for editing a "native PDF" not editing a scanned document.
It is not creating a searchable pdf from images the poster is after, he wants to start with an already searchable pdf and modify its text (e.g. because intially a searchable pdf was made but later an overlooked error in recognition was found and needs correction). I see no way and no tool that assists in doing this.
Thanks for reaching out to us. you Can Disable the Floating toolbar functionality by Going to Preferences and then unchecking the box saying "Show Quick actions on text selection". After this you will not see the Floating pop up any more.
Alright, you got rid of it on the text boxes - well done. But it's still present on other comment markups - bubbles, rectangles, arrows, etc. Trying to edit these graphic items continues to be challenging because of this unnecessary popup. Sometimes I'm having to relocate notes blindly because the popup is hovering over the intended final destination. I shouldn't have to do a command more than once because of poor software.
PLEASE include a way to switch off the black box. I can't see to type as it invariably hovers OVER the text box and I have to finish typing and then go back in to count characters to alter text.... VERY annoying :(
This feature is super annoying and not helpul AT ALL! No way to disable it? That's just crazy! Trash can covers up text that I'm trying to edit. This is a hinderance, not a help. Please, please get rid of this feature or at the least have a way to disable it!
This feature is annoying and obstructive. I use the reader to read and edit patterns. These pop-up boxes/buttons obscure the text, interrupt workflow, slow down productivity. Please PLEASE kill them ASAP. Thank you.

Click on the "Protect" tab and select "Mark for Redaction". Then go to the page where you want to hide text and select the text. You can also use the "Search & Redact" option to search for a particular word and hide it on all pages at once.
